Ingredients
  • ⅓ cup basmati rice
  • Water for soaking rice
  • 2 Tbsps. butter
  • 1 cup onion, chopped
  • ½ cup (2 stalks) celery, chopped
  • ½ cup (1 medium) carrot, chopped
  • ¾ lb. boneless, skinless chicken breast, cubed bite-size
  • 5 cups chicken broth
  • 1 ½ tsps. curry powder
  • ½ tsp. each coriander, cumin, salt
  • ⅛ tsp. chili powder
  • ½ cup heavy cream
  • ¼ cup fresh cilantro, chopped
Instructions
  1. Place rice in a small bowl and cover with cool water. Allow rice to soak 10 minutes then drain through a mesh strainer. Set aside.
  2. Heat butter in a large saucepan or pot on medium heat. Add onion, celery, and carrots and sauté 5 minutes.
  3. Add cubed chicken and sauté 5 minutes searing on all sides.
  4. Stir in broth, spices, and salt. Bring to a boil on high heat. Reduce heat to medium-low and simmer uncovered 20 minutes.
  5. Stir in rice and cream and simmer 10 minutes.
  6. Stir in cilantro and serve.
