Italian Hummus

Ingredients
  • 2 roma/plum tomatoes cut in half
  • 2 cloves garlic
  • 2 Tbsps. olive oil
  • 1 (15.5 oz.) can chickpeas, drained
  • 2 Tbsps. tahini
  • 2 Tbsps. fresh basil, chopped
  • 1 ½ Tbsps. balsamic vinegar
  • ¼ tsp. each black pepper, salt
Instructions
  1. Heat oven to 375° F. In a small baking dish, add tomatoes and garlic and toss with the 2 Tbsps. olive oil. Bake 20 minutes.
  2. Add tomatoes, garlic and all the oil from the baking dish to a blender or food processor along with the remaining ingredients. Blend smooth stopping to scrape down the sides. Transfer to a bowl and drizzle with olive oil. Best at room temperature.
