Easy Oven Roasted Mexican Salsa

Ingredients
  • 6 roma tomatoes, quartered
  • 2 small onions, quartered
  • 2 cloves of garlic, halved
  • ½ jalapeno, seeded
  • 1 cup coarsely chopped cilantro
  • 1 tsp. salt
  • Juice from an entire fresh lime
  • 2 tsps. liquid smoke (optional)
Instructions
  1. Preheat oven to 400.
  2. Place tomatoes, onions, garlic and jalapeno in a 9 x 13 inch glass baking dish.
  3. Roast vegetables for 30 minutes, stirring occasionally.
  4. Remove vegetables from oven and place in a blender or food processor.
  5. Add salt, cilantro, lime juice and liquid smoke.
  6. Blend to desired consistency.
  7. Flavor is best if you allow the salsa to cool a couple of hours before you serve.
