Italian Sausage Sliders

Ingredients
Sausage
  • 2 lbs. ground pork
  • ¼ cup red wine
  • 2 tsps. salt
  • 2 tsps. sugar
  • 1 tsp. fennel seed
  • ½ tsp. each black pepper, crushed red pepper
Other Items
  • 2 red bell peppers, sliced thin
  • 3 small onions, sliced thin
  • 2 Tbsps. olive oil
  • salt and pepper to taste
  • 1 dozen quality dinner rolls
  • Deli sliced Provolone cheese, cut to size to fit slider roll
Instructions
  1. Mix all sausage ingredients together in a bowl, cover and place in refrigerator
  2. Heat oil in skillet and season with salt and pepper. Add peppers and cook for 3 minutes. Add onions and sautee until onions are golden and caramelized.
  3. Meanwhile, toast undersides of the top and bottom of rolls on a grill, in the broiler or in a skillet. If using a skillet, brush a bit of oil or butter on each before toasting on medium heat. Place the bottom portions on a cookie sheet and set aside.
  4. Remove the sausage from the refrigerator and form patties to fit your rolls. Grill, broil or pan fry the patties until cooked all the way through, about 15 minutes.
  5. Place each patty on the bottom portion of the roll
  6. Top with onions, peppers and cheese. Place top bun half on.
  7. Place cookie sheet directly on the grill or in a pre-heated 350 degree oven for about 5-8 minutes or until cheese is melted.
