Soba Noodle Hummus

Ingredients
  • 1 (12.8 oz.) package (4 bundles) Soba noodles
Dressing
  • ½ cup prepared basic hummus, fresh or store bought
  • ¼ cup low sodium soy sauce
  • ¼ cup oil
  • 3 Tbsps. sugar
  • 2 Tbsps. rice vinegar
  • 1 tsp. ginger, minced or grated
  • ½ tsp. sesame seed oil
  • ½-1 tsp. crushed red pepper flakes
Salad
  • 1 cup (about 1 small) red pepper, thinly sliced then chopped
  • 1 ΒΌ cups (about 2 regular) carrots, shredded
  • ½ cup cilantro, chopped
  • 2 Tbsps. fresh mint, chopped
  • 2 Tbsps. fresh basil, chopped
  • ¼ cup scallion (green onion), chopped
Instructions
  1. Wisk dressing ingredients together in a medium bowl and set aside.
  2. Prepare salad ingredients and set aside.
  3. Bring a large pot of water to a boil on high heat and add the Soba noodles. Cook 2-3 minutes. NO LONGER! Drain through a mesh strainer and rinse under cold water.
  4. Place the noodles in a large bowl and add the dressing and salad ingredients. Toss together with tongs until well combined and serve.
Notes
Keep in mind that Soba noodles are very starchy and they do not store well as they become mushy overnight. The flavor's good, but the texture not as much. I recommend you only prepare what you will eat that day.
