Rice Krispie Whoopie Pies with Nutella Butter Cream

Ingredients
Rice Krispies Treats
  • 3 Tbsps. salted butter or coconut oil, divided
  • 1 (10 oz.) package regular marshmallows or 4 cups mini marshmallows, divided
  • 6 cups Rice Krispies cereal, divided
Nutella Butter Cream
  • ¾ cup (1½ sticks) butter at room temperature
  • 1 cup Nutella
  • ½ cup powdered sugar
  • 3 Tbsps. milk
  • 1 tsp. vanilla extract
Instructions
  1. Make the Rice Krispie Treats by melting half of the butter/coconut oil in a medium sauce pan on low heat.
  2. Once melted add half the marshmallows and cook until completely melted.
  3. Remove from heat and stir in half the Rice Krispies until well combined.
  4. Transfer to a greased 9 x 13 inch baking pan. Using your hands spread the mixture out evenly and pat down.
  5. Repeat to make a 2nd half batch.
  6. While the Rice Krispie Treats are cooling, combine all Nutella butter cream ingredients together in a medium bowl and mix with an electric mixer until smooth and fluffy.
  7. Use a heart shaped cookie cutter to cut out the Rice Krispie Treats until all the hearts are cut out. Take the scraps and form together and cut more hearts so not to waste too much of the treats. My batch yielded 20 hearts (to make10 whoopie pies).
  8. Take one heart, lather it with a generous amount of the cream butter and top with another heart. Repeat until all the heart whoopie pies are made.
Notes
If you want to make squares, I would slather 1 layer with the butter cream then top with the second layer and cut out the squares.
