Mexican Polvorones (Wedding Cookies)

Ingredients
  • 1 cup (2 sticks) butter, softened
  • ½ cup sugar
  • 1 tsp. vanilla extract
  • 1 ½ cups flour
  • ½ cup chopped pecans or walnuts (optional)
  • ½ tsp. baking soda
  • ½ tsp. cinnamon
  • ¼ tsp. salt
  • ¼ cup powdered sugar
Instructions
  1. Preheat oven to 350° F. Grease 2 cookie sheets or line with aluminum foil.
  2. To soften the butter, microwave 20 seconds.
  3. In a large bowl beat butter, sugar and vanilla with an electric mixer until well incorporated.
  4. Gradually add the flour, pecans, baking soda, cinnamon, and salt mixing to form a stiff dough.
  5. Pinch off chunks of dough and roll into ping pong size balls.
  6. Place powdered sugar in a bowl and roll each ball in the sugar coating all over.
  7. Place balls on the cookie sheets and bake 15 minutes (switching positions of the sheets after 8 minutes) or until very lightly browned.
