Double Chocolate Cupcakes with Pumpkin Cream Cheese Frosting

Ingredients
Cupcakes
  • 2 cups flour, sifted
  • 1 cup cocoa powder, sifted (I use Hershey's)
  • 2 cups hot water
  • 2 cups sugar
  • 2 eggs
  • 2 tsps. baking soda
  • 1 tsp. baking powder
  • ½ cup vegetable oil
  • 2 tsps. vanilla extract
  • ½ cup chocolate chips (optional if you want that extra chocolate gooeyness)
Frosting
  • 4 oz. (1/2 block) cream cheese, softened
  • ¼ cup (1/2 stick) butter, softened
  • ¼ cup pumpkin puree (plain, not pumpkin pie filling)
  • 1¼ cups powdered sugar, sifted
  • 1½ tsps. pumpkin pie spice
  • Flour to thicken icing as needed.
Instructions
  1. Preheat oven to 350° F.
  2. In a large bowl mix cake ingredients with an electric mixer until smooth and well combined.
  3. Line the muffin pan with cupcake wrappers.
  4. Fill the cupcakes ¾ of the way to the top with batter and top with ½ cup of chocolate chips.
  5. Bake 18-20 minutes or until until a toothpick inserted into the middle comes out clean. Allow to cool completely.
  6. In a medium bowl mix icing ingredients with an electric mixer and spread on cooled cupcakes.
