Coffee Can Pumpkin Harvest Bread

Ingredients
  • 1 cup brown sugar
  • ½ cup margarine
  • 2 eggs
  • 1¾ cup flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ cup plain pumpkin
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp ground cloves
  • 1 (1lb ) metal coffee can (do not use plastic or cardboard!)
  • shortening and sugar to coat
Instructions
  1. Remove coffee from can and rinse.
  2. Cut lip off of can with can opener ( illustration below)
  3. Coat can with shortening
  4. Place 1 tbsp of sugar in can and cover with lid
  5. Shake can until coated with sugar; remove lid
  6. Put all other ingredients in a large bowl and mix with hands until blended
  7. Pour batter in can
  8. Place can in deep kettle and fill with hot water until ¼ the way up the can
  9. Cover, bring to a boil and then reduce heat to medium (maintain a slow boil) and cook for 1 hour and 45 minutes
  10. Remove can from kettle and allow to cool before removing from can
  11. Bread should slide right out of can when tipped upside down and given a shake or two
